Whenever I come back from Matt's parents, I always come back full and with a ton of leftovers. The last time I was there, I came back with a big bag of apples. We had gone raspberry picking upstate, but in a last minute flurry of picking mania, Matt's mom gathered a few bags of apples...and handed off about 12 to me.
They weren't quite ready to eat, so they sat there on my kitchen counter, ripening. I stared at them, wondering what on earth am I going to do with all these apples. As they ripened, the pressure grew. It happened to be a very busy few weeks, and I had no time for pie baking nor mulling over recipes.The apples' presence started to bear down on me. Every time I went into the kitchen, there they were. Eat us! Save us! Cook us! Do something! Oh god, stop tormenting me, apples!! So I ate one. I ate two. Great...only 10 more to go.
But then! The recipe godmother came along by way of the Lazy Bakers. An easy apple cake recipe from Smitten Kitchen was proposed, and then, the burden of apple was lifted. This is easy! This is quick! I will be rid of you, delicious, accusing apples. And so they were. Check out Evil Cake Lady's concoction as well.
The cake was very easy to make, but seemed to take forever to bake. And by the time I finally took it out, it was probably a little too browned on the sides. But it very yummy. Intensely appley, I thought the walnuts were the perfect way to break up the flavors. This cake was so moist, and seemed to only become moister over time. And there was no way I was getting it out of that tube pan.
