phyllo-sophy


Monday night's dinner was this eggplant parmesan from Trader Joe's that Matt had bought a few weeks ago. I'm always a little wary of prepared foods (because many times they're just plain bad), but this was sooo good! It was very flavorful, a little spicy, and had big hunks of tomato and eggplant. But best of all, it was wrapped in phyllo douggh! I love all things wrapped in phyllo. Those paper thin buttery layers are always delicious, whether savory or sweet, and it always adds such an interesting texture to whatever the filling is. Crunchy, crispy, thin, browned and buttery. How versatile! Anyway, the eggplant parmesan was gigantic because it was a family size. So now I have my lunch.

not a big fan of gummy gooey eggplant but i'm always willing to give it another (like 23rd) go!

warning...it doesn't make for a good reheater in the microwave because of all the soggy, gummy phyllo.
